ALIMENTAL COLORING (E100-E182)
The colorings are organic synthetic or natural combinations, having the attribute of coloring colorless alimental products, of restoring a color or of emphasizing a fragrance.
The alimental colorings must fulfill some physical-chemical conditions; they should not be toxic and must be approved by the health legislation.
Colorings used in the food industry and distributed by ERTRAG:
Synthetic colorings , got by chemical synthetics, have a strong coloration power and are cheaper than the natural ones.
azorubine (carmoisine) E 122 - red powder, soluble in water, little soluble in ethylic alcohol. The purity of the active coloring substance is over 85%,
tartrazine (yellow) E 102 - orange powder, soluble in water. The purity of the active coloring substance is over 85%.
ponceau 4R (red) E 124 - red powder, soluble in water, glycerin and ethylic acid. The purity of the active coloring substance is over 82%.
orange S - sunset yellow (orange) E 110 - orange powder, soluble in water. The purity of the active coloring substance is over 85%.
quinoline (yellow) E 104 - yellow powder, soluble in water.
patent blue (blue) E 131 - the purity of the active coloring substance is over 85%.
brilliant blue (blue) E 133 - water soluble powder. The purity of the active coloring substance is over 85%.
indigotine (blue) E 132 - solid powder soluble in water and ethylic alcohol.
green (green) E 102, E 133 - solid powder.
brilliant black BN (black) E 151 - solid powder, soluble in ethylic alcohol. The purity of the active coloring substance is over 80%.
brown HT (brown) E 155 - brown-reddish powder, not soluble in water.
The ERTRAG Company commercializes liquid colorings, in doses of 3-5:1000, for pastry, sweets and confectionary use. Liquid colorings are bottled in cans of 5 or 20 kilograms. Their colors are: yellow, orange, red, blue, green.
Natural colorings:
are substances got extracted from plants, leaves, flowers (antocyanites), red beet (betacyanites), vegetable and animal reign (carotenoides) and so on.
curcumine (yellow) E 100 - yellow powder, non-soluble in water. It is used in margarine, fat emulsions, vine, bitter, jams, jellies, marmelade, sausages, pies, fish.
riboflavin (yellow) E 101 - yellow-orange powder, soluble in water, and non-soluble in alcohol.
beta-carotene (yellow-orange) E 160 - solid or liquid suspension, or emulsion, non-soluble in glycerin and in propylene glycol. It is used in candies, creams, fruit juices, different sorts of cheese, margarines, French fries, vegetable oils.
caramel (brown) E 150 - powder and gummy liquid substance, used in pastry, panification, beer, alcoholic and fresh drinks, jams, jellies, marmelades, sausages, pies, fish.
